Acoustic is an excellent all-round seed potato. If chosen to be harvested as a second-early the texture is waxy and perfect for salads and boiling. If left longer and harvested later in the season the texture matures to become more floury, perfect for chips, baking, mashing and roasting. Acoustic is highly resistant to blight and other diseases and produces high yields of round potatoes with pale-yellow flesh and a superb taste.
